Named after the Greek word for flint (Pyritis), this wine is a stunning tribute to the geological soul of Santorini. It is a premium blend of Assyrtiko sourced from three specific vineyards in Pyrgos and Megalochori, with vines averaging 120 years old. This is a wine that prioritizes structural tension and minerality over simple fruitiness. It stays on its fine lees for at least 10 months, gaining a dense, oily texture that balances its piercing acidity. On the nose, it is shy at first, opening up to reveal intense notes of wet stone, smoke, sea salt, and lemon curd. The finish is incredibly long and distinctively salty.
