A multi-dimensional white wine that redefines tradition through minimal intervention. Fermented with wild yeasts, a significant portion of the Malagouzia matures in traditional Cretan clay amphorae. Following 3-4 months of “sur lie” aging, the wine develops a beautiful textural oiliness. The nose is a vibrant bouquet of pear, peach, lime, and white flowers, while the Assyrtiko provides a signature mineral backbone and a refreshing, crisp acidity. It is bottled unfiltered with minimal sulfites to preserve its raw energy.
