The “Rare” undergoes a meticulous vinification: whole-cluster fermentation in large oak vats with indigenous yeasts, followed by 18 months of aging in 500-liter barrels. It is a monumental wine, boasting a near-black core and an explosive bouquet of crushed blackberries, iodine, oyster shell, and dark chocolate. On the palate, it is vertical, structured, and incredibly energetic, with “dry” schist-influenced tannins that give it a sophisticated, savory edge. It is less about “fruit” and more about the raw, mineral power of the Tinian landscape.
