CUVEE PALATIA 750ml

It is the result of a decade-long study of Santorini’s micro-terroirs. This wine is a masterclass in blending, sourced from 100-year-old ungrafted vines across seven iconic vineyards (including Ftelos and Louros).Unlike some of their heavier, oak-aged versions, this is fermented in stainless steel and aged for 9 months on its fine lees. It offers a more “delicate” yet incredibly concentrated expression of the volcano. Expect an explosion of lemon blossom, grapefruit, and sourdough on the nose, followed by a palate that is razor-sharp, creamy, and intensely saline.
